《食客關注組》Ep.2 燒賣
燒賣是香港人其中一樣最愛的街頭小食,「香港燒賣關注組」更是多個飲食關注組中最多followers的一個!
比起製作出最美味的燒賣,我更希望把燒賣當作食材,與大家分享如何用燒賣做出美味的菜式,引起更多人的共鳴,令世界上有更多人關注我們香港人的「#港式燒賣」!
上次分享咗「冰花煎燒賣」嘅食譜俾大家,今次出埋我YouTube《#店煮》系列另一道燒賣菜式 - 「#意式芝士焗燒賣」俾大家啦!

材料 Ingredients:
份量 - 1 份
魚肉燒賣 Fish meat siu mai | ~15-20 pcs
- 芝士白汁 Cheesy Béchamel Sauce -
無鹽牛油 Unsalted butter | 20 g
中筋麵粉 All-purpose flour | 20 g
牛奶 Milk | 250 ml
鹽 Salt | 1/2 tsp
胡椒粉 Ground pepper | 1/4 tsp
豆蔻 Nutmeg | "
水牛芝士 Mozzarella cheese | 50 g
- 香辣茄醬 Spicy Tomato Sauce -
番茄醬 Tomato sauce | 100 g
煲仔飯豉油 Sweet soy sauce | 1 tbsp
辣椒醬 Chilli sauce | 2 tsp
- 裝飾 Garnish -
番茜 Parsley | "
做法 Directions:
製作芝士白汁。在一隻小鍋中加入牛油煮溶,然後加入麵粉煮數分鐘後,分三至四次加入凍鮮奶,一邊加一邊攪拌。加鹽、胡椒粉、再刨入少量豆蔻,之後煮大概5至10分鐘,煮至略為稠身。加入Mozzarella芝士,煮溶便可關火放旁備用。
準備香辣茄醬。在一隻可以放入焗爐的小鍋裡加入番茄醬、煲仔飯豉油和辣椒醬,攪勻煮滾後,便可關火。
放入已解凍的燒賣,盡量鋪滿。便可以把芝士白汁倒入,輕輕鋪平。再在表面放上芝士碎,放入已預熱至200度的焗爐中,烤焗大概20分鐘或直至表面變成金黃色便可。
在表面灑上蕃茜碎作裝飾,這道菜式便完成。
Make Cheesy Béchamel Sauce. In a small pot, melt butter over small-medium heat, add flour in and cook for a few minutes. Gradually whisk cold milk into the roux. Add salt, pepper and freshly ground nutmeg, and cook for about 5-10 minutes until thicken. Add mozzarella cheese and stir until all melt. Turn the heat off and leave aside for later use.
Make Spicy Tomato Sauce. In an ovenproof pot, add tomato sauce, sweet soy sauce and chilli sauce in. Bring everything to a boil and turn the heat off.
Fill the bottom of the pot with a layer of siu mai, then pour the béchamel sauce on top and lightly smoothen the surface. Sprinkle more cheese on top and place the pot in a pre-heated oven at 200C. Bake for about 20 minutes or until the surface becomes golden-brown.
When done, remove from oven and sprinkle some chopped parsley on top. Enjoy!
