【墨西哥式煎蛋早餐 Huevos Rancheros】

每天的第一餐是非常重要,因為它能完全影響你整天的心情。而出外旅遊時,早餐亦是很好的機會去體驗各地的飲食文化。今集香港開電視的《30 分鐘大放餸》中,第一道菜我便會分享在旅行期間品嚐過的「墨西哥式煎蛋早餐」(Huevos Rancheros)。

Whenever I travel, I love taking my time to look for good local breakfast places. I believe breakfast reflects a city's food culture.
In this episode of 30 Minutes Meals, I showcased one of my favourite dishes, huevos rancheros. The spiciness from jalapeño along with the tartness from the lime and tomatoes wake me up and give me a fresh start for the day. Plus, this wonderful dish is a pleasures to the eyes. I mean com'on, look at the colors! It's just as great as my shirt!
材料 Ingredients:

-- 莎莎醬 Salsa --
紅洋蔥 Red onion | 1個 pc
蕃茄 Tomato | 2 個 pc
蒜蓉 Garlic | 1 瓣 clove
墨西哥辣椒 Jalapeño | 1隻 pc
芫荽 Cilantro | 1 束 spring
砂糖 Sugar | 1 茶匙 tsp
鹽 Salt | 1/4 茶匙 tsp
胡椒粉 White pepper | 1/4 茶匙 tsp

罐頭黑豆 Canned black beans | 1/2 罐 can
青檸 Lime | 1 個 pc
墨西哥薄餅 Tortilla | 4 塊 pc
雞蛋 Eggs | 2 隻 pc
蒙特里積芝士 Monterey Jack cheese | 100 克 g
牛油果 Avocado | 1個 pc
做法 Directions:
預備莎莎醬。在鑊中加入菜油,炒香洋蔥碎,再放入已去皮切粒的蕃茄、蒜蓉、辣椒碎、芫荽碎和調味,煮 15 分鐘。再用手持攪拌器把醬汁略為攪爛。
把罐頭黑豆在鑊中炒熱,調味。加入青檸皮和汁。用叉子稍為壓爛,放旁備用。
在鑊中加油開火,將薄餅在鑊中煎至香脆,拿起上碟。
再煎蛋,把少量刨好的芝士放在旁邊讓它一起溶化。
上碟。把煎蛋放在薄餅上,將莎莎醬淋在雞蛋旁邊,再放上黑豆、芝士、牛油果和芫荽伴碟,完成!
Prepare the salsa. In a frying pan, add some vegetable oil. Add the chopped onion, minced garlic, chopped jalapeno, cilantro and seasoing, cook over low to medium heat for about 15 minutes. Then use a hand blender to roughly blend the mixture into a thick paste.
Pour the canned black beans into another frying pan over low heat and dry them up a little bit. Season well. Then add the lime zest and juice in, and use a fork to lightly break the beans apart. Off from the heat and reserve for later use.
In a clean frying pan, add a little bit of vegetable oil, toast and brown your tortilla over medium heat. One minute on each side.
Fry a sunny-side-up egg. Grate some of the Jack cheese over the egg white.
Assemble. Place the egg on top of the toasted, warm tortillas. Put spoonfuls of salas around the egg. Then add the beans, cheese, avocado and cilantro on top. Done!
