【泡菜即食麵御好燒 Kimchi Okonomiyaki】

材料 Ingredients:
低筋麵粉 Cake flour | 60 g
水 Water | 90 ml
韓式辣泡麵 Shin Ramyun | 1 tbsp
椰菜 Cabbage | 1/4 pc
芽菜 Bean sprouts | 20 g
泡菜 Kimchi | 20 g
午餐肉 Luncheon meat | 2 slices
炸蒜片 Deep-fried garlic | 1 tbsp
水牛芝士 Mozzarella | 1 tbsp
雞蛋 Egg | 1 pc
- 醬汁 Sauce -
茄汁 Ketchup | 3 tbsp
喼汁 Worcestershire sauce| 1 tbsp
韓式辣椒醬 Korean chili paste | 1/2 tbsp
水 Water | 2 tbsp
砂糖 Sugar | 1 tbsp
麻油 Sesame oil | 1/2 tbsp
豉油 Light soy sauce | 1/2 tbsp
老抽 Dark soy sauce | 1/2 tbsp
- 裝飾 Garnish -
沙律醬 Mayonnaise | 2 tbsp
蔥 Green onion | 1 bunch
韓式紫菜 Seaweed | 1 tbsp
做法 Directions:
把麵粉和水拌勻做成麵糊,放旁15分鐘。
製作醬汁。把醬汁材料拌勻。
煲一鍋滾水,把泡麵煮至八成熟,拿出隔水備用。
在平底鑊中加入少量菜油,開中火,倒入七成粉漿,用鑊鏟推薄成圓形。同時間,按次序在上邊放上泡麵調味粉、椰菜絲、芽菜、炸蒜片、水牛芝士和午餐肉片,再在上端淋上剩餘的麵糊。煮了一兩分鐘後,用兩隻鑊鏟把御好燒反轉。
同時間在另一隻平底鑊中加入少量菜油,放入煮熟的泡麵,加入兩湯匙的醬料炒勻,再用鑊鏟推成與御好燒一樣大小的圓形。把(4)的御好燒轉移至炒麵上端。
在一隻乾淨的平底鑊中加點油,開火。打入雞蛋,再把(5)御好燒剷在雞蛋上煮半分鐘。把御好燒再次反轉。在表面掃上醬汁,便可上碟。
在上端唧上沙律醬,放上蔥花和韓式紫菜碎便完成。
Mix flour and water together to make batter. Left aside for 15 minutes.
Make sauce. Mix all ingredients together.
Bring a pot of water to a boil and cook the shin ramyun to 80% doneness. When done, drain well and reserve for later use.
In a frying pan, add a little bit of vegetable oil. Turn to heat up to medium and pour in 70% of the batter. Use a ladle to spread the batter as thin as possible. At the same time, place the shin ramyun seasoning, shredded cabbage, bean sprouts, deep-fried garlic flakes, mozzarella and luncheon meat on top of the batter. Drizzle a little bit more of the batter on top. Let the pancake cook for 1-2 minutes. Use two spatula to flip the pancake over.
At the same time, in another frying pan, add a little of vegetable oil. Put the cooked shin ramyun in it and add 2 tablespoons of sauce into the pan and mix well. Use the spatula to form a round pancake shape. Transfer the pancake from step (4) on top of the shin ramyun.
In a clean frying pan, pour some oil into the pan. Fry an egg over medium heat. Transfer the pancake from step (5) on top of the egg. and cook for another 30 seconds. Flip the pancake over and brush some sauce on top of the pancale.
Drizzle more mayonnaise and seaweed on top as garnish and this okonomiyaki is ready to be served.
